Josh's Veggie Skewers

Ingredients:

  • Yellow, green and red peppers, cut 
  • Dates, whole
  • Zucchini, cut
  • Cherry tomatoes, whole
  • Fresh Garlic, minced
  • Squash, cut
  • Extra virgin olive oil
  • Balsamic Vinegar
  • Lemon
  • Favorite seasonings
  • Skewers
  • Instructions:
  • Heat oven to 325
  • Mix olive oil, garlic and balsamic vinegar with half of a lemon squeezed and seasonings.
  • Soak skewers in water for 20 minutes before use. 
  • Dry and skewer the veggies.
  • Bake for 15 minutes
