Ingredients:
- Yellow, green and red peppers, cut
- Dates, whole
- Zucchini, cut
- Cherry tomatoes, whole
- Fresh Garlic, minced
- Squash, cut
- Extra virgin olive oil
- Balsamic Vinegar
- Lemon
- Favorite seasonings
- Skewers
- Instructions:
- Heat oven to 325
- Mix olive oil, garlic and balsamic vinegar with half of a lemon squeezed and seasonings.
- Soak skewers in water for 20 minutes before use.
- Dry and skewer the veggies.
- Bake for 15 minutes
